Supplies for making Rainbow Cakesicles + Cakebars

Cake Balls, in your choice of flavor(s)

White chocolate candy coating (Such as Wilton’s Candy Melts)

Popsicle sticks, if making cakesicles

Piping bags for melted chocolate

Half-striped Cakesicle Mold

Edible Art Paint: pastel pink, red, yellow, pastel green, pastel blue

Small Paint Holder

Paint Brush Set

Hip Hip Hooray Sprinklefetti Sprinkle Mix

Nonpareil Sprinkles in Hip Hip Hooray

Edible Gold Paint (or Rolkem’s Super Gold, mixed with lemon extract)

How to Make Rainbow Cakesicles with Stripes + Gold Splatter

I love rainbows. They just make me happy! And, rainbows + gold splatter on a cakesicle...can there be anything better? This technique uses the same splatter-style as described in my last post, Hip Hip Hooray Cakesicles but you’ll save that step for the end.

To begin, use your Edible Art paints to paint a rainbow design. To help with planning/painting, I put a small dash of paint on each stripe that will be painted in that color. That way, when your toddler distracts you by asking for her 87th snack of the day, you can easily return to where you left off.  

After each stripe is painted and dried, use a sturdy piece of paper or cardstock to create a barrier right along the line of the stripe/smooth divide. While holding the cardstock in place, tap the paint-covered fan brush to splatter gold drips all over the white half of the cakesicle/cakebar.

How to Make Rainbow Cakesicles with Nonpareils + Gold Edible Paint

Use a paintbrush to paint gold paint on the smooth side of the cakesicle/cakebar. If you are using the Rolkem + Lemon Oil solution, as I did, you’ll need to paint at least 2 coats. If you use Edible Art Paint there are a few gold shades so you can choose the tone that works best for you.

I love the tiny rainbow-dotted sprinkle stripes of this design. To achieve it, use a piping bag filled with melted white candy melts (and a very fine tip, to create a thin line) to pipe a line on top of the indentation on the bar. Before the chocolate cools, spoon the nonpareils over it. I was able to pipe 2 lines, and then sprinkle with nonpareils. If your workspace is pretty cool, you may have to work with just one line at a time. I live in Savannah, Georgia, where it’s still 87-degrees for most of September, so “cool” is not a word I can use to describe my workspace until usually mid-January.

Add the two rainbow cakesicle designs to a plate, wrap up as party favors or create a full display of them for a birthday party table! The possibilities are endless! The trend of adding multiple kinds of sweets to a display not only adds interest it provides a variety of treats to please any palette!

Hip Hip Hooray Party Table with Cakesicles

My specialty is in making cake pops and cakesicles. When I was asked to style party table using the cakesicles I made I was intrigued. I haven't done many of those but found it was fun to play around with the placement and to think of other ways cakesicles could be displayed and how you can use leftover supplies like the sprinkles as table confetti and to put on cake stands.
