Gingerbread Pancake Mix Holiday Gifts

We're sharing a delicious recipe for Gingerbread Pancake Mix plus a pretty way to package them up for the holidays! Homemade gifts have always been a tradition in our families. Pancake mix is a perfect, easy and fast gift for Christmas or winter birthdays! You can make them ahead of time, include them in a gift basket with maple syrup and preserves. The spice in our gingerbread pancake mix makes them extra special for the holiday season and cold winter mornings.

Shauna's Gingerbread Pancake Mix

Dry Mix Ingredients:
3 cups all-purpose flour
1/4 cup dark brown sugar
2 1/2 tablespoons baking powder
3/4 teaspoon salt
1 1/2 tablespoons ground ginger
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves

Whisk together all of the ingredients above in a bowl, then fill a half pound tin tie bag. This recipe makes enough to fill one bag.To make the presentation special we've come up with a Sweet Christmas Tin Tie Bag Kit that gives you the bags, twine and tags so all you have to do is make the mix and provide the mixing instructions below to have a great gift!

Include the instructions below with your pancake mix. You can print them on labels to put on the back of the bags or print them on cards you include with in your breakfast gift basket.

Gingerbread Pancake Mixing Instructions:

You will need:
2 1/4 - 2 1/2 cups milk or buttermilk
6 tablespoons of vegetable oil or melted unsalted butter
3 large eggs
2 teaspoons of vanilla bean paste or extract

Instructions: Pour the pancake mix into a large bowl. Whisk in the milk, oil, eggs and vanilla until smooth and no lumps of the mix remain. Spoon into a heated oiled pan or skillet. Cook on medium heat until both sides are golden brown. Serve with butter and your favorite maple syrup!

This recipe makes 12-18 pancakes depending on how large you make them or many mini's like we chose to make. Isn't everything in mini size cuter?
