Christmas Cupcakes with Rice Krispie™ Toppers
We're sharing how to make Christmas cupcakes with Rice Krispie™ toppers just in time for the holidays. If you are in need of a quick Christmas cupcake that is sure to delight these are it! Even cupcakes can use a little magic from Santa this time of year, right?! We'll show you how you can transform store bought Rice Krispie Treats™ into cute cupcake toppers that make the perfect pedestal for Santa to sit, stand and do kart wheels on some fun Christmas cupcakes.
To make your Christmas cupcakes bake your favorite cake in some pretty cupcake liners. We're pretty smitten with the new S&T BakeBright™ cupcake liners we'll be carrying and this project was the perfect excuse to test them out! These fabulous cupcake liners are made of a premium greaseproof paper so the colors and whites stay bright after baking. They are a tad taller than traditional standard size cupcake liners giving you a couple extra bites!
For our Christmas cupcakes we used a yellow cake mix and added a full dram of LorAnn flavoring oil in orange to give it an extra burst of flavor. You can turn any white or yellow cake mix into a variety of flavors by adding a flavoring oil. They are highly concentrated flavorings that can enhance cakes, cookies, frostings and icings. I use them in many of my shortbread cookie recipes too.
While your Christmas cupcakes are baking you can start making the Rice Krispie™ toppers for the Santa's to do some tricks on. One packaged single serving Rice Krispie Treat™ gives you two cut out rounds using a jumbo plain frosting tip. Note, it is important to use a plain tip as you use your finger to push out the treat once you cut it out and if you are using a jumbo french tip you may poke your finger. The rounds will be narrower on top making them the perfect size for the tiny marshmallows and Santa that you will be adding.
After you have enough of your Rice Krispie Treats™ cut out for the number of cupcakes you are making it's time to decorate them with chocolate and sprinkles! In a small bowl melt some dark or white chocolate. Dip the larger bottom of the treat in the chocolate going about half way up. Sprinkle with festive nonpareil sprinkles and set them on a piece of parchment or wax paper to set up.
After the treats have set up it is time to add a little more melted chocolate to the sop with a spoon. You don't want it to go over the edge. Add some of our tiny marshmallows around the outer edge. Make sure to leave the middle free from marshmallows since you then need to push the Santa cupcake pick down through the top center of the treat. Add a swirl of frosting to your cupcake using a jumbo french frosting tip. Use jimmie sprinkles and sugar pearls to decorate the frosting swirl. Put the fully assembled Santa rice krispie topper into the top of your cupcake. Lastly place your Christmas cupcakes on a serving plate, stand or tray and cover the serving piece with more tiny marshmallows to make it look like snow. How cute is that?!

I like the rice krispies treat but what REALLY sets these off are the Santa’s. Are these gum paste or bought? If bought do you remember where?
