Decorating Funfetti Cupcakes With Sugar Cookie Dough Bon Bons

It's my birthday so what better way to celebrate that to share with you decorating ideas for funfetti cupcakes! We went a little sprinkle crazy with this one...but hey, that's what birthdays are for, right?! These cupcakes have quite the surprise topping. We made funfetti sugar cookie dough that we rolled in more sprinkles to top our funfetti cupcakes! See how to make them below.

Now if you are like me maybe you have a love hate relationship with frosting? I must admit I am a whip cream kind of girl and dare I say I like ice cream better than cake! However I do enjoy a cupcake and thought this might be a fun project to come up with some creative ways to decorate funfetti cupcakes using minimal frosting and of course using more sprinkles!

Now who doesn't love cookie dough?! We wanted to go over the top with our funfetti cupcakes so we made funfetti sugar cookie dough...oh yes, we went there! We are calling them funfetti sugar cookie bon bon's! They turned our to be the perfect topping for our cupcakes! Recipe below.

After the funfetti sugar cookie dough is made and chilled for a bit scoop it out using a mini cookie-ice cream scoop to make the bon bons. Add the chocolate glaze to the top of the cupcakes first. We used a store bought chocolate treat glaze and heated up a small amount of it in the microwave to soften it. Once it was lightly heated, but not too hot we used a spoon to spread a small amount of the glaze to cover the top of the cupcake. Be careful not to add to much as it can flow off the cupcake and make a mess of the pretty cupcake liners. This is also why you don't want the glaze too hot as it gets too runny. Quickly sprinkle on some rainbow jimmie sprinkles before your glaze hardens and then you are ready for the next step!

After your chocolate glaze is on the cupcakes and the sprinkles are in place it is time to get the funfetti sugar cookie bon bons ready for placement! Once the chilled dough is scooped out carefully roll them one at a time in rainbow jimmies. Place one on the top of the cupcake and you can either leave them as is or you can add an accent of frosting like we show above to finish them off. A little frosting will help hold the funfetti bon bons stay in place and the white frosting does add a nice detail even if you aren't a big frosting fan. We had some extra bon bons left over so we made some fast and easy stuffed mini sugar cookie bites with them. All we did was add a bon bon between 2 bite size strore bought sugar cookies and lightly pressed down being careful not to break the cookies and then rolled the edge in the rainbow jimmie sprinkles. How cute are these?!

Funfetti Sugar Cookie Dough Bon Bon Recipe:

1 stick of unsalted butter, softened
¾ cup sugar
2 tsps vanilla extract or vanilla bean paste
1 cup AP flour
¼ tsp salt
1-2 tbsp milk
1/2-3/4 cup jimmie sprinkles for adding to the dough and rolling.

In a large bowl combine the butter, sugar and vanilla, mix thoroughly. Add the flour, salt and 1 tablespoon of the milk. Mix well and add more milk a little at a time if needed. Stir in the sprinkles and you are ready for Bon Bon scooping!!

Note: For best results use locally produced good quality butter. Vanilla bean paste or pure vanilla extract will give you that perfect burst of flavor.
