Berry Triffle Bowls and Cups
Summer just screams berries doesn't it?! We are sharing a quick and easy recipe for summer berry dessert bowls and triffle cups. All you need is a few ingredients and a warm sunny summer day to enjoy this yummy treat...preferably outside! Find out the new ingredient that what we used as the creamy no bake "cheesecake" like filling below.
Summer desserts should be quick and easy so you can get outside! Here in Maine we have a short summer so when it's nice out that is where we will be. For this dessert you can make it a couple ways depending on the cake you like or you can even skip the cake to have a healthy version too! We used store bought shortcake rounds and vanilla pound cake for the base. We packed up the desserts in 2 of our fun containers, our large ice cream cups and our tall drink cups with lids. You can enjoy your desserts right away or pack them up to take with you to the park, beach or wherever you go to enjoy the weather!
To make your easy summer berry dessert you will need fresh berries, pre-made shortcake rounds or if you have time make your own, pound cake and a new item we found at the grocery store a couple weeks ago that is a mix of whipped cream cheese and Greek yogurt! Um...yum! We added a little vanilla bean paste to the whipped cream cheese-yogurt mixture and that was all it needed to taste like no bake cheesecake! EASY and that is what summer should be all about right?!
Shauna's tip for washing berries:
Whenever I bring home berries from either the grocery store or the farmer's market the first thing I do is give them a vinegar bath! Simply pour about 1 tablespoon of apple cider vinegar (my personal preference is organic) and fill a large bowl with cold water. Place the berries in the vinegar water, soak for about 10-20 minutes, then strain and rinse well in cold water. From here I cut up my strawberries and place any other berries in small containers for each day and they stay fresh for an entire week in the refrigerator! I have the best luck with strawberries and blueberries for a full seven days, and typically can get 4-5 days with raspberries and blackberries. The science behind this is the vinegar kills off any mold spores giving your berries a longer life than if you were to just place them in the refrigerator straight from the source.
Easy Summer Berry Bowls Dessert Bowls
Supplies needed:
large paper ice cream cups - these fit a pre-made shortcake round perfectly
Grocery store and farmers market items:
Berries of your choice
Whipped Greek Cream Cheese and Yogurt Blend
Vanilla bean Paste
Pre-made shortcake rounds
Pre-made vanilla pound cake
Mint for garnish
Steps to Make Your Berry Summer Bowls and Cups
1. Mix 1 tablespoon of the vanilla bean paste right into the container of the whipped Greek cream cheese and yogurt and stir until combined.
2. Wash, chop and mix the berries and fruit of your choice.
3. If you are making the berry bowls place one of the shortcake rounds in the bottom of an 8oz paper ice cream cup. Add a dollop of the cream cheese-yogurt mixture on top. Add your berry mixture and garnish with mint.
4. If you are making the triffle style berry cups cut up your pound cake into small cubes. Place some of the cake on the bottom of the cup. Add a dollop of the cream cheese-yogurt mixture then some of the berries. Repeat until you fill your cup. Place the lid on and pop one of our small wooden forks in the hole in the lid and you are ready to serve.
